Production

From dough to cannoli shell

From mixing to frying, each step gives the Sicilian cannoli shell its distinctive shape, golden color, and crisp bite.

Mixing and sheeting

The process begins with a carefully balanced dough. It is then worked gradually into a smooth, even sheet, ready for the next stages.

    Dough mixing

The ingredients are measured and combined until the dough is even and consistent.

  2. Cannoli shell dough passing through the rollers in the Leone workshop
    02

    Sheeting

With each pass, the dough becomes thinner and forms a smooth, even sheet.

  3. A broad sheet of cannoli dough stretched across the work surface

    Dough stretching

Final stretching brings the sheet to the thickness and structure needed for cutting.

Cutting, forming, and frying

Cutting and forming give each shell its profile. Frying completes this part of the journey, turning the shaped dough into a golden, crisp shell.

    Cutting

The cutting roller divides the sheet into the shapes required for forming.

  2. Pieces of cannoli dough being wrapped by hand around metal tubes
    05

    Wrapping

Each piece is wrapped around a tube to create the shell's distinctive cylindrical form.

  3. Cannoli shells immersed in oil as they fry in the Leone workshop

    Frying

Frying develops the shell's golden color and crisp texture.
